Isabel’s pizza mix makes very pliable dough, which is nice to work with and easy
to roll out using a rolling pin. And most of all it genuinely is really tasty!
Isabel developed the pizza mix with the help of a famous Italian restaurant
in Leeds.
“I received a call from Gip Dammone from Salvo’s, who was trying to find a gluten-free
pizza that was just like mama used to make”.

the expertise of the Pizzaiolos at Salvo’s we developed a gluten & wheat free
pizza base mix using only natural ingredients, for an authentic taste of Italy.
“We were able to help Salvo’s by using traditional Brazilian allergy free flours,
and came up with a thin crust Neapolitan style pizza base that people genuinely
can’t tell is gluten-free” explains Isabel.
Salvo’s, which has just been voted one of the top 10 places to eat pizza in the
UK in March 2008 by The Times and the Square Meal Guide, is proud to be a gluten-free
pioneer. Now this leading Italian restaurant can offer their customers who can’t
tolerate gluten the holy grail of a chewy, crispy crust that tastes like pizza should.
Salvo’s dedication to provide delicious Italian food and passion for great pizza
has led them to tackle the problem of finding the perfect gluten-free pizza.
“We’ve spent over a year trying to develop a good gluten free pizza base” explains
co-owner Gip Dammone. “We tried the mixes and frozen bases already on the market,
but none came up to scratch.”
